Winemaker's Comments: This Shiraz is a full and round bodied powerful wine, with aromas of black mulberry, eucalyptus, mint, toasted oak and ripe red fruits. Its flavor is massive, dense and concentrated, featuring a ripe and sweet tannin and a long pleasant finish.

This wine was composed of 85% Shiraz grapes from Gilad vineyard in Kfar Yuval, with an addition of 15% Cabernet Sauvignon. With the arrival of the Shiraz grapes to the winery, they were crushed and the must was immediately cooled at 14 ° for cold maceration. The maceration lasted three days, during which the natural enzymes decomposed and released particularly strong and stable aroma and color substances.
After these three days, yeast was added to the must, which was designed specifically for extracting the unique, strong fruity aroma of the Shiraz grapes. After 10 days of fermentation and a gentle press, the wine was transferred to a stainless steel tank for malolactic fermentation. The Cabernet Sauvignon grapes were fermented and aged in separate barrels.
After a period of six months in the barrels, during which the wines’ flavors stabilized, the final blend was created, in order to receive the desired complexity and harmony.

After creating the final blend, the wine was returned to the barrels for an additional 9 months of aging.
The wine was aged in oak barrels, half of which were French and the other half, American.
Before bottling, the wine was roughly filtered to preserve its tastes. After bottling, the bottles were placed for further aging for several months.
